The holidays are coming for us, and they’re bringin days and days of incredible food, decadent sweets, and hard-earned naps. No shame here, the holidays only come once a year and we should enjoy them, and all of the delicious treats they bring, while we can.
However, leading up to the holidays, we may want to take it easy. Embrace moderation. Make it easier for ourselves come January 1. In my opinion, the tastiest and most satisfying way to eat a little lighter is with a great bowl of soup. It’s comforting, it’s warm, and if you skip the cream, they’re deceptively light.
Here are 10 Soups to Get You to the Holidays. Look at us. All moderate.
Sweet Potato Soup with Crispy Bacon. Sweet potatoes are good for you and when pureed, create a creamy soup without any cream. In this case (and some would say in this case only), a little bacon goes a long way.
Roasted Broccoli Soup with Lemon and Parmesan. This is one of my favorite soups, ever. Roasting the broccoli before putting it in soup really deepens the flavor, the Parmesan gives it a nice earthiness without adding a bunch of fat, and the lemon brightens the whole thing up. I wish I had some right now.
Creamy Butternut Squash Soup. I welcome Fall every year (well, every year since I discovered the wonder that is butternut squash) with the soup. I’ve made it so many times I don’t even need a recipe. It’s easy, delicious, and good for you.
Spinach, Tomato, and Tortellini Soup. Kind of like a big bowl of pasta, without the big bowl of pasta. This soup has all of the flavors of a huge Italian feast without any of the belt busting side effects.
Chicken and Avocado Soup. Kind of like chicken noodle soup but with more sass. I love this soup packed full of fresh cilantro. It’s a taste of warmer weather disguised as soup. Plus, it’s decidedly healthier than taco night.
Delightfully Creamy Tomato Bisque. There’s nothing more classic than a bowl of tomato soup. This season, I’ve been craving it at least once a week. Add a grilled cheese and curl up and get cozy.
Creamy Spinach Soup. I need you to trust me and also ignore the fact that this soup looks like a muppet. It is really, really good and really, really good for you. (Also pairs well with a grilled cheese, but what doesn’t?)
Hot and Sour Soup. Skip the take out, and the loads of sodium, and make your own hot and sour soup. This is a favorite of mine and being able to make it at home alleviates any temptation I may have to just order one egg roll. Just one!
Three Cheese Tortellini in Mushroom Broth. The secret of this soup is a rind of Parmesan cheese in the broth. It imparts all the flavor into the soup, and the cheese tortellini is perfect.
Gorgonzola + Potato Soup. So potato soup wouldn’t normally be considered light, but by using half and half instead of heavy cream, and a little gorgonzola cheese instead of tons of cheddar, it lightens up a usually pretty heavy dish into something that is still delicious but a little bit better for you.
