Cook: Pizza Bagels, 4 Ways

Last night I made beer braised short ribs and they were delicious.  They were also definitely grown-up food.  Fancy short ribs and fancy potatoes with fancy plating.

What I’m writing about now though is completely opposite of that and honestly I don’t remember the last time I was more excited about dinner.  Remember pizza bagels?  Usually mini-sized with sauce and cheese and weird small chopped up pepperoni heated in the microwave to a level most kids would call “lava” and then consumed in front of the TV while Mom told you not to ruin your dinner?  Remember?

What if we made the mini bagels regular sized?  And what if we used not-chopped up pepperoni and also some buffalo and barbecue chicken?  And what if we threw some fancy grown-up cheese on one and then put them all in the oven to get melty and golden and toasty?  We could still eat them in front of the TV.  In fact, we should eat them in front of the TV.

There are a lot of possibilities here.  I made four different kinds of pizza bagels, but you could make as many different kinds as there are pizza flavors, which is to say, endless.  You could also double the amount you make and freeze the rest, reheating as needed.  You could host a pizza bagel party, or you could have an afternoon snack, or you could eat some for dinner and take one for lunch the next day.

This time I made pepperoni pizza bagels with good pepperoni and mozzarella cheese.

I made barbecue chicken pizza bagels with chopped chicken, barbecue sauce, and some red onion for bite.

I made buffalo chicken pizza bagels with chopped chicken, buffalo sauce, and plenty of crumbled blue cheese.

And I made four cheese pizza bagels with mozzarella, parmesan, extra sharp provolone, and feta.

I could have gone on.  Cheeseburger pizza bagels, hawaiian pizza bagels, sausage and peppers pizza bagels, mediterranean pizza bagels…

You get the idea.  You can do it all, so long as it’s fun.  Pizza bagels have to be fun.

Here’s the recipe.

Pepperoni Pizza Bagels

Ingredients

  • Plain bagels
  • Pizza sauce (homemade or, be easy on yourself, and get it from a jar)
  • Good pepperoni
  • Shredded mozzarella cheese

Method

  1. Preheat oven to 400 degrees.
  2. Cut the bagel in half and spread sauce on both sides.  Top with cheese and pepperoni.
  3. Place in the oven until melted and golden brown, about 10 minutes.

Buffalo Chicken Pizza Bagels

Ingredients

  • Plain bagels
  • Buffalo sauce (I like Frank’s Red Hot!)
  • Chopped or shredded chicken (either roast your own or grab a rotisserie)
  • Blue cheese crumbles
  • Sliced red onion

Method

  1. Preheat oven to 400 degrees.
  2. Cut the bagel in half and spread sauce on both sides.  Top with chicken, then blue cheese, then lay a couple of slices of red onion on top.
  3. Place in the oven until melted and golden brown, about 10 minutes.

Barbecue Chicken Pizza Bagels

Ingredients

  • Plain Bagels
  • Barbecue sauce (I like Bone Suckin’ sauce!)
  • Chopped or shredded chicken
  • Shredded cheddar cheese
  • Sliced red onion
  • Cilantro (optional)

Method

  1. Preheat oven to 400 degrees.
  2. Cut the bagel in half and spread sauce on both sides.  Top with chicken, then cheddar cheese, then lay a couple of slices of red onion on top.
  3. Place in the oven until melted and golden brown, about 10 minutes.  Garnish with chopped cilantro before serving.

Four Cheese Pizza Bagels

Ingredients

  • Plain Bagels
  • Pizza sauce (homemade or, be easy on yourself, and get it from a jar)
  • Shredded Mozzarella
  • Shredded extra sharp provolone
  • Grated Parmesan
  • Crumbled Feta

Method

  1. Preheat oven to 400 degrees.
  2. Cut the bagel in half and spread sauce on both sides.  Top with mozzarella, then provolone, then feta, and finally, the Parmesan.
  3. Place in the oven until melted and golden brown, about 10 minutes.

Serve any and all with ranch dressing.  No shame.
