List: 8 Make-Ahead After School Snacks

School is well under way.  There’s a brisk breeze in the air.  The leaves are starting to turn vibrant shades of orange and red and yellow, and come 4:00pm, we’re hungry.  

I’m not much of a snacker, but when I was teaching, I would come home at 3:30 and be starving.  Not wanting to ruin whatever dinner plans I had, I’d keep some healthy, make-ahead snacks around to stave off that mid afternoon hunger.

Here are 8 Make-Ahead After School Snacks sure to please the hungriest kids, or you, if you’re sitting at your desk and it’s 3:30pm and your turkey sandwich has worn off.

Spicy Herb Parmesan Crackers.  These are salty, spicy, herby, and addicting.  They’re great in soup, but also great by the handful.

Pumpkin Spiced Pecans.   These are lightly spiced with the flavors of Fall.  They’re a great healthy alternative for a mid-afternoon snack.

Stove-top Popcorn with Rosemary and Truffle.  Popcorn is always a go-to in this house.  I love it with just a little salt, but it’s always fun to kick it up with some extra flavor.  And plus, truffle.

Skinny Banana Loaf Cake.  For when you want a piece of cake, but also want to not nose-dive into a sugar crash an hour later.  You know, for that.

Sweet and Spicy Rosemary Cashews.  These things are addicting.  They’re only healthy if you portion them out–if you don’t, you’ll wonder where all of the cashews went.  Believe this.

Basic Hummus.  Hummus is super easy to make, really delicious, really healthy, and a great after-school snack.  Add some crunchy carrots and I’m in heaven.

Chocolate Drizzle Salted Kettle Corn.   It’s sweet, salty, crunchy, and delicious.  A handful of this satisfies a multitude of cravings.

Wholesome Pumpkin Loaf with Chocolate Chips.    Make two, freeze one, have pumpkin bread whenever you want.  You’ve got this.
