It happened, it’s finally Friday. Did you think it wasn’t going to come this week? I did. I totally did.
It’s raining cats and dogs here so it’s fitting that I’m posting a cocktail made of fresh, tropical juice (can’t stop/won’t stop) which was enjoyed on a sweltering day on my patio. That yellow color is almost enough to drive the rain away, don’t you think?

Here’s the recipe.
Mango Pineapple Spritzer (serves 1)
- 2 ounces vodka
- A splash of Fresh mango pineapple juice*
- Lime juice
- Club soda
- Basil for garnish
- Fill a tumbler with ice. Add vodka and stir well. Add a splash of the mango pineapple juice–it’s kind of thick and very sweet so you really don’t need much! Squeeze a wedge of lime in and top with club soda. Stir well, and garnish with a sprig of basil.
*Mango Pineapple juice: Peel and slice a mango and feed it through your juicer. Add 2 cups of pineapple, cubed. Makes 8 ounces of juice–plenty for cocktails. Alternative: freeze it in ice-pop molds! Healthy popsicles!
