We’re in the heat of Summer, but regardless of how hot it is outside, I’m almost always up for eating meals outdoors. Who cares if I have to douse myself in “deep woods” bug repellant! We have a little balcony that we’ll eat our dinner on sometimes, and every time we go to New Jersey in the Summer to stay with K’s parents they always have a beautiful dinner outside by their pool. I dream of someday having a large patio with an outdoor kitchen and a big table and friends and wine and food and…
If you have one of those dream situations, can I come over? Here’s some food that’s perfect for outdoor dining when I do. I’m not picky, any of these will work. I’ll bring the wine!
Pulled Pork Sliders with Tangy Slaw. I’m pretty sure I made it very clear that it’s appropriate to enjoy these anywhere. Especially outdoors.
Chicken Salad with Lemon and Pesto. Perfect for a picnic–leave the mayo out if you’re going to be outside for extended amounts of time. Otherwise, enjoy!
French Bread Pizzas. They’re endlessly customizable–make them on the grill, then pile them up in the middle of the table and go to town. It’s Summer, be rustic!
Hatch Chile Salsa Verde. Everyone loves chips and dips. They’re perfect for enjoying pool side, after a grueling day of floating.
Oven-Baked Coney Islands with Homemade Chili. They’re not as portable as hotdogs, but they’re hearty and filling and most of all, crowd-pleasing.
Charred Corn Salsa with Avocado. To me, there’s nothing more Summery than fresh corn. Char it, and I’m yours forever.
Toasted Greek Panzanella. K laughed at me when I told him we were having Bread Salad for dinner, but with all of those vegetables and fresh flavors, it really does taste light. Plus, you don’t have to worry about lettuce wilting in the hot sun.
Mustard-Glazed Bacon-Wrapped Water Chestnuts. When eating outside, it’s best to have something snack-y sitting around. These will go like hot cakes. Or, like anything wrapped in bacon.
Slow-Cooker Balsamic Barbecue Pulled Chicken. This recipe is an all-star. It’s wonderful on its own or in a sandwich. Best of all, it can cook inside all day while you’re out doing Summer things, then it’ll be ready for your outdoor meal whenever you’d like.
Shredded Seasoned Chicken Tostadas. They’re light, they’re tasty, and they’re perfect with a cold margarita.
So I’ll just be on my way over whenever you tell me to be there. I’m nothing if not prompt.
