Whole canned tomatoes, an onion, butter. That’s all you need to never buy a jar of tomato sauce ever again.
This recipe, which is Italian cooking maven Marcella Hazan’s creation, took the Internet by storm a couple of years ago and hasn’t let up since. Marcella Hazan, author of such tomes as Essentials of Classic Italian Cooking and The Classic Italian Cookbook has instructed her readers in the essentials of Italian cooking with firmness and love. Her instructions are explicit–do it her way and you won’t be disappointed.
Marcella Hazan recently passed away and the void she left in the food writing community was immense. Bloggers, chefs, editors, and home cooks alike all took to their kitchens to honor this amazing woman by bringing quality, fool-proof Italian cooking to their own tables, by way of her genius recipes. Many of these writers and cooks chose this recipe, her incredibly simple but almost indescribably delicious tomato sauce recipe.
With just three ingredients, Marcella illustrates her philosophy on Italian cooking. She creates a sauce that anyone could do and anyone could be proud of. If you are interested in Marcella’s career and influence, these writers have honored her much better than I could.
So ditch the jar, let’s make some really mind-blowing sauce.
The sauce is nothing but unadulterated tomato. It is unimpeded by any herbs, spices, or vegetables. The onion lends it’s flavor without overpowering, and the butter’s sweetness tames the natural acidity of the tomatoes.
A pinch of salt is all you need to bring all the flavors together. There is no chopping, no simmering all day, none of that. It’s as simple as you can get, and the flavor is outstanding.
I kicked myself for waiting as long as I did to make this sauce, because now it is my go-to tomato sauce. I’ve made it three times since.
The genius of this recipe is it’s simplicity. Good ingredients and a little bit of time are all you need, and Marcella Hazan knew that. I can’t wait to delve deeper into her recipes.
Start with this sauce, and you’ll be as hooked as I am.
