For many, this upcoming weekend is full of family and food. For me, it’s going to be full of boxes, a rental truck, and just about 1,000 miles of road travelled. But just because I won’t be enjoying a lovely brunch and celebrating the season doesn’t mean you shouldn’t! Here are some ideas that are perfect for celebrating and enjoying with friends.
There are some traditional and not so traditional brunch items, everything from a casual get-together to a traditional lamb supper. Whatever your brunch needs, I’ve got you covered.
Proscuitto and Brie Sandwich. Perfect for a casual get together.
Spinach Salad Pizza. Put an egg on it and call it brunch!
Green Chili Breakfast Casserole. This one’s a hit, I promise.
Croque Monsieur with an egg on top (which I believe actually makes it a Croque Madame). Fancy grilled cheese, sign me up.
Lemon Garlic Sole over wilted spinach. It’s fresh and flavorful and perfect for Spring.
Bacon Wrapped Asparagus Bundles with Poached Eggs. They’re cute because they’re wrapped!
Shaved Asparagus Flatbread. These are easy to put together, yet look super elegant.
Shaved Asparagus and Zucchini Salad. Because shaving vegetables with a peeler is fun.
Summer Squash Gallette. This is supposed to be “rustic” so don’t fret if it doesn’t look perfect.
Caramelized Onion and Goat Cheese Frittata. Make this the night before to save you some time.
“Hatsie’s” Salad. In my opinion, every gathering is made better with Hatsie’s salad. I might be biased though.
Rosemary Spiced Cashews. To nosh on with your mimosa!
Crunchy Broccoli Slaw. A perfect combination of texture and flavor.
Roast Lamb Tacos. A twist on a traditional Spring Lamb.
Goat Cheese and Asparagus Quinoa. Healthy to start the season off right.
Any combination of these dishes will be sure to please your guests and make your life simple. That’s a tall order I’m promising you, right? I do try my best.
